A Keto Easter chocolate recipe that is healthy and can reduce chemo nausea!

This morning I was thinking about today being Easter Sunday and how those of us on the Keto diet and those of you undertaking Chemotherapy right now who have nausea and no appetite, may struggle more today.
I’m no huge fan of commercialised holidays or the drive for junk food/junk chocolate at times like these but there is still something special about the ritual of Easter and other holidays.
Anything that brings families together, sharing traditions and encouraging connections between people is a big tick in my book.
So I thought I would share with you this quick recipe which take minutes to make (and seconds to eat) and show you how to make that work for Chemo nausea too.
It’s very simple, I promise!
I will start by saying that all these ingredients need to ideally be organic.
Ingredients
2-4 tbsp Raw Cacao Powder (depending on your carb allowance)
250ml Extra virgin coconut oil
250ml Raw almond butter (peeled almonds ideally)
(maple syrup if you aren’t keto or your favourite keto sweetener if you are - you can use stevia, allulose or monk fruit sweetener to taste).
The Method
Blend everything in your high speed blender until it’s a thick chocolatey liquid.
You can spoon this liquid into silicone sweet moulds (we made these last Christmas as you can tell from the shapes).
Or you can scrape the liquid and spread it out over a flat silicone sheet on an oven tray, to decorate with any of the following.
Cacao nibs, sunflower seeds, pumpkin seeds, bee pollen, hemp seeds.
You can also put the chocolate mix into ice lolly moulds and put the stick in, to freeze.
You can also add in medicinal mushrooms if you like into this mix, Lion’s Mane, Chaga, Cordyceps, Turkey Tail, Reishi - all 4g of each in the whole thing (a therapeutic daily dose of each is around 1-4g a day total).
Put the silicone moulds to set in the fridge, it won’t take long before you can enjoy them!
How to make this work with chemo nausea
Simply freeze the sweets or the brittle and break into pieces when frozen.
The coolness has a soothing effect on nausea and the fat in the chocolate will help you to continue making ketones which can help chemotherapy to work better even when you really can’t face eating a proper meal.
